Pastinum In Latin, pastinum literally meant hoe, and in a broad sense “ground to be planted with vine”. The hoe used to shape the “cacalupo”, the little earth dike meant to collect water, a godsend in this parched land, in those days like now. Preparing the pástino in this gentle valley is an old and difficult art: planting the alberello-trained vines (similar to the gobelet method) of Verdeca, Bianco d’Alessano and Fiano grapes into the rocky soil and waiting for the sun to ripen them slowly is the result of an age-old experience. The winery “i Pàstini” located in the very heart of the trulli country tries to keep the wisdom of the old traditions alive, carrying them on along with the latest vinification techniques and, thus,  achieving the top quality the Apulian oenology is able to produce.
