The vineyards of “I Pàstini” are all located within one of the most typical areas of Apulia, the Valle d’Itria, and particularly in the municipalities of Locorotondo and Martina Franca.
This area has always been particularly suited for the growing of white grapes, such as the high-quality autochthonous varieties Verdeca, Bianco d’Alessano and Fiano Minutolo.
The vineyards stretch north-south and are thus exposed to the sun from dawn to sunset in a large valley at 350 mt. a.s.l., framed by the hill-perched towns of Martina Franca (431 mt. a.s.l.) and Locorotondo (410 mt. a.s.l.).
The valley benefits from a constant north breeze that moderates the high summer temperatures ensuring a balanced daily temperature range, which contributes to the excellent quality of the grapes.
The uniform irradiation, the proper temperature range, and the constant breeze are crucial factors in achieving perfectly sound grapes rich in aromatic substances with an ideal ratio between acidity and sugar.
The mass selection, carried out by a highly skilled staff from the autochthonous varieties of Valle d’Itria, along with the particularly favourable pedoclimatic conditions, enable our Winery to process unique white grapes, whose exclusiveness marks the organoleptic features of the wines produced with the pride of the most authentic tradition.
